So you may have heard of Teff, but you aren't exactly sure what it is. Teff is a tiny grain derived from Ethiopian grass called Eragrostis Teff. It has been consumed throughout Africa for thousands of years and is extremely nutrient dense and is also extremely efficient and sustainable to grow.
In a nutshell it is packed full of protein and calcium, is low GI, high in fibre, high in iron, a good source of resistant starch, nutrient rich, contains no gluten or nuts (accommodating the fussiest of eaters making it suitable for those with coeliac disease, a gluten intolerance or wheat sensitivities)! We've included a quick and easy recipe below to demonstrate how Teff can be used. Both the Teff grain and flour are available at Coco's.
